Culinary Kitchen Rotation: | The Participant will receive training in the main kitchen of the hotel. | This department prepares and executes culinary functions, event functions, which include plated breakfasts and lunches as well as buffets. | – Preparing all hot food for Breakfast buffet. | – Hot Batch cooking for buffet, timely and well-seasoned replenishment. | – Working of prep-lists and completing of projects based on written documentation. | – Learning basic breakfast recipes. | – Preparing all hot food offerings. | – Assisting the Cafeteria with preparing a daily rotating menu for 500 associates. | – Participating in plate ups for meetings and preparing hot food for banquet buffets. | – Walk-in maintenance and rotation on food using FIFO principals and proper food labeling. | – Maintaining clean containers and food service areas in walk in. | – Writing readable food requisitions and maintaining proper pars through ordering. | – Learning hot food garnishing and presentations. | – Maintaining proper hot food holding temperatures based on the Fahrenheit system. | – Station Set-up, Special Preparation, Rotation and mise en place set up.
