Culinary Kitchen Rotation Intern: | During your training you will be rotating through several kitchen areas in which you will learn: | – Master how to complete items on the set up list in a timely manner | – Master techniques in mass production of fruit and vegetable carving in preparation for display and consumption | – Become proficient in the managment of the hot line preparation and plating of hot foods | – Complete inventory count & controls. | – Proper storage of food items to meet safety standards. | – Plan and cost menus | – Setting of new menus for organizational restaurants and/or outlets to include specials, banquets, and outlets | – Kitchen management
